I love love love coconut cream pie!
Feeling brave….I tried it.
It took me a loooonnnngggg time to find the right recipe.
I ended up using the Taste of Home version.
I have to admit…
It’s not the prettiest thing, but it sure tasted good.
I made this whole thing from scratch.
Why do we say from “scratch”?
It does not sound appetizing.
I used to think it was a place when I was little.
Anywho…my sister bought this for me a few years ago.
I love it!
I use it all the time, but have never made a pie in it.
First the dough.
Which means: by starting from the beginning with the basic ingredients.
Yep, I googled it (I had time while the dough was chilling)!
I made the dough as described….dry then cold wet.
Don’t over work it.
Put it in the fridge.
The pics were boring so I spared you the bowl of white stuff.
So now, I have to get the flour out and put it on the counter.
Remember, flour has a mind of it’s own when I am around.
I love love love my butcher block counter tops.
But that’s another story.
Time to roll.
It was at this point that I got some help in the kitchen.
Dixie said she wanted to try flour!
It didn’t taste very good.
So she stared at me for a while.
Then Zoe came in to see what all the fuss was about.
Zoe didn’t like the flour either.
Do y’all see that dirty look Dixie is giving me?
I bet she doesn’t beg for flour anymore!
Rolled out and in the pie pan.
Pie pan or pie plate?
Which do you say?
Is it a regional thing?
Trimmed and pretty.
Now, what do I do?
Recipe…recipe…place pie weights on top of the dough and bake.<
Pies work out?
What the heck?
I don’t have pie weights.
It’s almost 10:00 at night.
I live in the boonies.
I dont’ have anything to use for pie weights.
This is my only pie pan.
Oh well……here it goes without pie weights.
Ok, I need some pie weights.
This is NOT pretty!
It’ll be covered with coconutty goodness, right?

I have never made that and to be honest…
I am excited to try it.
I love that fluffy stuff!
Coconut custard isn’t hard to make.
As long as you can stir.
I wish your could smell this now.

Bake and wait.
Now, this isn’t the prettiest pie in the world.
It tasted very good though.
I got one slice.
My in laws and husband liked it too.
I need to work on the dough.
Maybe I should make another.
I wonder if the hounds will help this time?
